Potato Salad "Bavarian Style"
1 cup beef broth
4 Tbsp. white wine vinegar
1 Tsp. hot mustard
1 cup chopped onions
1/2 cup copped chives
4 Tbsp. oil
salt and pepper
Boil potatoes for about 20 min., drain, peel potatoes while still hot.
Heat the broth and season it with mustard, vinegar, salt and pepper.
Cut potatoes in thin slices while they are still warm and cover them with hot, seasoned broth.
Mix broth and potatoes , then add chopped onions, chopped chives and oil. Mix and serve while the salad is still warm!
