2(8oz) packages of cream cheese bricks
3/4 cup of sugar
3 drops yellow food color
1 teaspoon Vanilla
1 teaspoon lemon juice
Strawberry slices to decorate (optional)
Preheat oven 375 degrees. Cream the cheese and sugar. Add eggs (one at a time) and then add vanilla, lemon juice and food color. Beat for 1 minute.
Place wafer flat side down in muffin pan lined with cupcake papers. Fill 1/2 to 2/3 full with cheese mixture.
Bake at 375 degrees for 15 minutes.
When cool carefully remove papers and place on sheets in refrigerator. Can be served plain or topped with a strawberry with 1 teaspoon strawberry jam on top as a glaze.
Can be made up to 3 days ahead.
